General Task Area and Objectives
The Pizzaiolo is responsible for the fermentation chamber and the 48-hour dough fermentation, following a recipe clearly defined by the head chef. Additionally, the mise en place must be prepared according to the head chef's guidelines.
Main Duties and Responsibilities
As a Pizzaiolo, you will be tasked with the following responsibilities:
- Managing the pizzeria area effectively.
- Preparing pizzas, focaccia, and other specialties according to menu recipes.
- Collaborating with the head chef/chief pizzaiolo on the management, storage, ordering, and quality control of supplies.
- Organizing the work of assistant pizzaiolos and supporting them with basic tasks.
- Memorizing the menu.
- Ensuring the safety and hygiene of the pizzeria area.
- Maintaining high quality and quantity standards.
Competencies
The ideal candidate will possess the following competencies:
- Good knowledge of Italian and basic knowledge of French or German, depending on the work canton.
- Understanding of traditional pizza specialties.
- Familiarity with the nutritional components of foods.
- Professional knowledge of gastronomy, including preparation of dishes, cooking, food storage, and proper use of kitchen and cooking utensils.
- Mastery of basic principles of work organization and staff management.
- Basic knowledge of administrative tasks, such as checking delivery notes and goods deliveries.
- A strong understanding of hygiene, health standards, and accident prevention.
